Espressos are normally blended from several coffees to produce a characteristic flavor profile. In this case, we simply roasted our micro lot coffee from Santa Maria de Dota in the Tarrazú region of Costa Rica for espresso and it produced an exceptional espresso full of rich chocolate and orange goodness. The almond notes from the coffee produced an Amaretto flavor to top off the satisfying sweetness.

Process Method
To conserve water, Coopedota uses a process called eco-pulping to scrub the fruit from the coffee cherry. Once the parchment is cleaned, it is spread onto concrete patios where it is raked and turned frequently to promote even drying. Drying is completed in rotating drums called Guardiolas.

Cooperativa de Caficultores de Dota R.L. (Coopedota) was founded in 1960 by 96 growers and has since grown to 850 members. Coopedota is south of the country’s capital, San Jose, in the Tarrazú valley which is one of the premier coffee-growing regions in the world. Most member farms are small, averaging around 2 hectares (5 acres).
In 2011, Coopedota became the world’s first certified carbon-neutral coffee exporter. Coffee byproducts are used to fuel the mechanical drying guardiolas and water usage is reduced by using eco-pulpers at the wet mill. The cooperative manages trash pickup in their home city of Santa Maria de Dota, and converts the waste into renewable forms of energy. Coopedota strives for a sustainable economic impact in the community through the creation of jobs.
We visited Santa Maria de Dota in August, met the people at Coopedota, and did a blind cupping of their special micro lot coffees. Lot #0038 was our choice for this special offer. It is wonderful example of the special flavor profiles from Santa Maria which is central to one of the premier coffee growing regions in the world.
